Jerusalem Artichoke Tubers: Sunchoke – Helianthus Tuberosus

Description

Jerusalem artichoke, Sunchoke, earth apple tubers. These plants grow into tall sunflower-like flowers… Multiple smaller heads than a normal sunflower, but produce a wonderful tuber underground that can be eaten. The tubers can be harvested throughout the year and have a nutty flavor. They can be used as a potato like substitute, they don’t necessarily taste like potatoes, but can be used anyway that you use potatoes. Grilled, fried, baked, or mashed.

If you don’t harvest all of the tubers, they will come back every year, and multiply (spread). I planted a 1 gallon pot full of tubers, and after 1 full year I was able to harvest just shy of a 5 gallon bucket full of tubers… With a ton still left in the ground for a continuous, almost everlasting supply of tubers. I spread them all over my property so I have a continuous supply for myself, my family, and supplemental livestock feed.  Bees love the flowers, so it is also a great plant for pollinators.

These will be freshly dug up at the time of order. Depending on the time of year, the tubers may feel squishy,super firm, or somewhere in-between… No matter how they feel, they will grow.  They are perennials, so planting them once will allow for a crop, year after year.

Everything I grow is free of chemicals, my farm is not certified organic, but I only use natural fertilizers from my animals and never spray insecticide or herbicide on anything.
